Curtis Stone hands out some great tips for poaching fish like a MasterChef using whatever vegetables you may have left over in your fridge at the end of the week. Simply add flavours that go amazingly well with fish like star anise, fennel, bay leaves, black peppercorns and regular stock items like onions, carrots & celery.

Remember, whatever you do don’t bring to the fish to the boil, poaching is not boiling. If we want you to boil it we’d say boil and not poach!
