While it is called a curry in a hurry Michael ran out of time in this 10 minute segment. Cooking at home however you can easily get this dish done in 15 minutes, especially if you are using crushed chilli, ginger & garlic out of a bottle.

You can also easily switch out the prawns for chicken, tofu and even halloumi according to Michael. Pretty much whatever you have in your fridge or freezer.

Cooking curry does not have to feel like an Olympic event on the sub-continent.

Here is a delightful little blackberry sauce from Michael Oliver for Christmas. Perfect for gammon or ham this will be a special little something on your Christmas table.

You can substitute the redcurrant jelly with apple or quice as with the liqueur, if you don't have Cointreau you can use another citrus based one like Grand Marinier or van der Hum.
