Gareth Daniell, more commonly know as Braai Boy smashed the Guinness World Record for the worlds longest braai / barbecue marathon over the weekend. Braai Boy, Gareth Daniell will be attempting to set a new world record for the worlds longest braai by braaing for 60 hours straight. He will be attempting to rewrite the record books from 23rd - 25th August, at SuperSport in Centurion and is not simply looking to set a new record but to obliterate the old one which is currently 32 hours. Everything has a use and that includes the husks and cobs from your mielies! Don't through them away, use them to make a broth or a stock which can then be used wherever you might normally use a vegetable stock. Place the husks and the cobs into some salted water and simmer for an hour, allowing the flavour to infuse. We all hear about it but exactly why should you rest your meat before serving. It is very important that you let your meat rest once you have finished cooking it. When you remove meat from the heat it continues to cook and allowing it to rest allows the cooking process to end and the meat to stabilise. Not true according to Harold McGee, author of Keys to Good Cooking. If you want to keep the juices you need to keep the internal temperature below 60C.
